If I am hosting a domain and the client wants the email on another providers server is this possible? If so ho do I set it up? and what info do I need from the client?

There's an option to change MX servers for a domains email under the cPanel Mail Accounts menu.
They should be able to change it themselves if they wanted to.

the client's domain is domain1.com and all their emails are user@domain1.com what do I put in for the FQDN? another domain? ie: something the other server would provide?

Ask your clinet what is address of his mail server and put that address in MX record in DNS zone for client's domain.Comment

Your client will have had to sort out a new mail server for themselves.
If they are in control of their own DNS then this is easy enough to do, by pointing a subdomain to a different servers IP address. They can then use that subdomain as their mail server.
If, however, they don't have control of their DNS, then they're going to have to use a thrid party to control their mail. This means that the service they have signed up for will have to provide them with the correct URL to use.
They need to provide you with all this information to get it working
